Wild Game Processing Price List
Due to our growth in production and size of equipment we will no longer be processing separate batches of venison sausage as of November 9, 2012. Whole deer will still be processed in the same manner as in the past. All cuts and ground venison burger will be only from your deer. Venison ham will also be tagged and kept separate for smoking. Since our updated equipment is much larger than our previous equipment, it no longer allows for creating smaller batches of sausage. By using larger equipment, it is necessary to use larger batches of ingredients.
You can be rest assured that our standards remain the same. We will not accept any venison trim that does not meet our high standards of quality. We only accept clean, non-freezer burned venison trim. Venison trim will be inspected by our staff when it is brought in and again when it is thawed before processing. Venison trim will be rejected for quality reasons such as hair, excessive bone chips, blood shot traces, odor, dirt or any other unsanitary conditions. Use food-grade containers/bags when bringing in wild game trim.
All batches of sausage will be our standard percentages of venison, beef, and pork trim; we will no longer customize batches of sausage for individual customers. Summer sausage and snack sticks, are one third venison, beef, and pork. These types of products will be done with a fifteen pound batch size; five pounds of venison will be required for an order. Wieners, bratwurst, honey ham sticks, venison bacon, and all other products are half venison and half pork. These products will be done in order sizes of ten pound orders; five pounds of venison will be required for an order. Any other percentages will not be considered unless there is a one hundred pound batch of sausage of any one type. Our turnaround time on venison will remain the same due to holidays and a busy fall season.
A non-refundable deposit of $50.00 is required with a wild game drop-off.
All prices are based on fresh weight. Please note that all smoked products are subject to weight loss (shrinking) and the amount of loss will vary with the product.
All fresh cuts and sausage products will be vacuumed sealed to ensure maximum freshness.
If you'd like the head saved, it must be picked up within 7 days or we will dispose of it. Fresh cuts need to be picked up within 3 days of being called. Sausage orders need to be picked up within 7 days of being called. If this is not possible, special arrangements must be made.
If wild game orders are not picked up within 60 days of being notified we will donate orders to a food pantry. Your deposit will not be refunded!
